I've read through the disk encryption documentation found here:

It is not exactly up to date.
When I figure out how to configure it on Freenas 9.0.0.1 - Sandstorm (revision 139) I'll post my 'how to' here.

So I was on 9.0.0.1 - Sandstorm (revision 139) and following this tutorial:

I had no luck at all
I upgraded to 9.0.0.1 - Sandstorm (revision 141) and I ran though disk encryption without any hiccups at all.
