I want to implement HAST and CARP on 2 file servers, 1 of them has “live” important files on a ZFS raidz3 Virtual Device.
Can anyone tell me / confirm if it’s possible to implement HAST and CARP on an existing ZFS setup?

no, it's not possible.
every disk is converted to hast device and onto hast device will the ZFS go.
you can't change existing zfs disk to hast device.
but anyway....what you want to achieve are big changes and when it comes to important data, I won't play with it, unless you have a cold backup.

what if I install HAST and CARP on my current secondary file server make this the primary system for CARP and move my data to the new primary File Server, is there a risk (I mean High Probability) of anything breaking on synchronization ?

this would work, but please....create a cold backup for the worst case!
I don't know If you have experience with hast and carp and the CLI, because some commands you still have to do in the CLI. and because of this (maybe new feature for you) you should REALLY have a backup anywhere of your data.
changes are always a risk. you could break the whole configuration of both n4f boxes and even your cold backup could be dead because of bad disk. the really worst case.
whenever I can, I work with 2 cold backups!
