Hello guys, and thanks for looking at this.
I've lost my pool and had a few other errors after performing a shutdown in the GUI. I imported the disks to try to reinstate the pool but it does not show any space being used? I ran fsck to repair some issues until it reported file system clean, just cant seem to use that device path to bring the pool back. Im a bit lost for the next step here!

fsck & ZFS is not possible so something is wrong in your description.
perhaps fsck is in boot disk not in data disk?.

12.1.0.4 - Ingva (revision 7743) on SUPERMICRO X8SIL-F 8GB of ECC RAM, 11x3TB disk in 1 vdev = Vpool = 32TB Raw size , so 29TB usable size (I Have other NAS as Backup)
